Trout are farmed at the Zupan Fish Farm in the village of Nomenj, which is fed by a stream from below the Jazna River. Initially limited to fresh trout and trout fillets, the range was expanded a few years ago to include cold-smoked trout. The smoking process uses only beech and apple wood, which, combined with the cold Bohinj air, preserves the moisture and natural colour of the fish.
