Homemade flour made from Bohinj maize trdinka
The once widespread “turšca” in Bohinj can now only be seen in a few fields. The indigenous variety of hardneck has multi-coloured round seeds and is adapted to growing in mountainous areas. It is distinguished by its quality and is a symbol of strength, abundance and peace.
Flour made from Bohinj maize durum is produced by hand in the traditional way. We only fertilise the field with farmyard manure. In spring, the maize is hand-planted and then hand-tilled and harvested It is dried first in the air and then on a rustic stove.
Grind the grains into a coarse flour, leaving the hulls. Our flour is therefore darker in colour and more noble in taste. .
